So my family picked me up some round steak because they want me to try cooking it sous vide. However, most of the advice I'm seeing recommends at least 8 hours in the water. I'm not going to be able to start cooking until at least 4 or 5. Is a few hours a reasonable time frame to achieve a decent, medium-rare round steak? Or should I abandon trying to do this tonight?
