Bags aren't large enough for my standing rib roast, can I make a franken bag?

I just realized that the roast I intend to cook for dinner is too large to fit in my bags (I have the roll type 11" wide bags). I ran to the store to grab 2 gallon ziplocs but they no longer carry them apparently. Is it possible to cut the side off of 2 lengths and seal them together to make an extra large bag? Otherwise I am stuck cooking it in the oven(or cooking without the ribs) and I would prefer to avoid that.
