I've had issues with swelling in my right leg, to the point that I was admitted to the hospital for IV antibiotics because of cellulitis that developed during an episode of swelling. We have been trying to figure out a solution or cause for the swelling. Both legs swell up but the left one is never noticeable unless you really try to look. Doctor believes it's caused by my weight and sodium levels.
Currently I eat mostly frozen food or things I can pop in the microwave. I don't like spending time cooking as when I'm hungry I want to eat right away. If I spend the time cooking then by the time it's done I no longer have an appetite. Which is bad considering my doctor believes my body is in "storage mode" constantly which is preventing me from losing fat. I figure the best solution is the crock-pot. Super easy clean up, I can drop it in before I go to bed, wake up and put it in the fridge, then come home and heat up some of it. Not to mention it can easily be multiple meals from one full pot.
Any suggestions you have or links to recipe books/sites are very welcome. If you know of recipes that have extremely low sodium that'd be awesome.
