On a whim, I bought a thing of parsleyroot at Wegman's. I had never heard of it before. If I'd known it was gonna cost $5, I probably wouldn't have bought it because it was a pretty tiny bundle of insubstantial food (that's like $1/calorie).
But anyway, I fried the root in butter. Raw it was very celeryish, which I don't love but parsleyroot did celery better than celery. Fried in butter it was nice. I made a little tuna salad with it, which I mixed with the greens from the parsleyroot. It's a different variety than any of the normal breeds of parsley, but I actually liked it quite a bit. It came with way more of the greens than the root (it's really a special kind of vegetal parsley with bonus edible roots). The flavor was parsleyish but not too strongly herbal, which was good because the salad was mostly parsley greens.
So on the whole, parsleyroot gets a solid B+, though that's mostly for the nice greens. If you can stomach the price, give it a try.
