Smoked ham hock tonkatsu?

I just picked up two large smoked ham hocks from the local farmer's market. One I'll definitely use to make a big batch of collards, but I was trying to think of creative uses for the second hock.

Could I use it to make some tonkatsu ramen broth? If it was just a plain hock, I wouldn't see any problems, but according to the packaging it is smoked and seasoned with salt, brown sugar, celery juice powder, and cherry juice powder. I won't know how strong the flavors are until I cook up the first one (which probably won't happen until Tuesday), but it seems like an odd flavor profile to build a tonkatsu broth off of.
