so I found a brinkman offset smoker that replaced a small electric smoker i had. I smoked fish on it several times, but i was having issues with only one side heating properly, heat escaping out of the gaps on the hood, and inaccurate gauges. so i already modded it some by putting sheet metal plating to distribute the heat more evenly across the smoker, and i installed 2 more accurate gauges closer to the cooking area to get more accurate readings. while this has all made a big difference, I am still dealing with a lot of smoke(and heat) escaping from the gaps when i close the hood. is there anything i can do to help with this? any help would be greatly appreciated.
