So when it comes to cooking I become a nervous wreck. So I want to turn to you guys for tips on handling it. I plan on reverse searing it to medium rare but I don't have a trustworthy thermopen. So any tips, recommendation? How long should I keep it there and at what temperature? Any spices? I am planning on using salt and pepper.
