I don't even know if you can brulé this, but maybe there's a way?
I made a bread pudding with some pear cut into it. When I was burning the sugar, the pieces of pear sticking out burnt black. But if I burned it any less, the sugar wouldn't brulé. I tried all different distances and amounts of flame.
