I've been thinking about posting this for awhile, but I have never written a recipe before and this was something I "invented" (at least, I haven't found a recipe similar yet) and I don't always measure ingredients. Alas, I made it today and it was amazing, and adaptable. This recipe yields about 5-6 servings. Great rolled up in tortillas as well.
Ingredients:
- 24 oz can of tomato-based pasta sauce (i use hunt's - zesty & spicy, cheese & garlic... whatever i have on hand)
- 3/4 cup and 1/4 cup hot sauce (i use homemade, usually ghost pepper based but suit to your heat preference, additional sauce can be added later)
- 1lb of thawed shrimp (i use uncooked frozen with shells and tails, but thaw and take the shells and tails off before cooking)
- 1 16 oz box of rotelle (any penne/rigatone type of pasta will work, rotelle is my favorite for capturing the sauce)
- 4 slices of bacon, chopped into bits (optional, but delicious... also mini pepperoni is good too)
- 1 tbsp of dried chopped onion (use fresh if you prefer)
- 1 tbsp butter
Directions:
- In a medium sauce pan, heat butter over low-medium heat. In a large sauce pot, heat water over medium-high to boil. Remove shells and tails from thawed shrimp.
- In a bowl, toss shrimp with 3/4 cup hot sauce. Add shrimp and sauce to pan and cover, stirring and flipping occassionally.
- Add uncooked pasta to water (seasoned to preference). Cook to box direcions, stirring occassionally (mine takes 12 minutes which is perfect for both the shrimp and the pasta to be done).
- Open can of pasta sauce, set aside. + (Optional: Cook bacon during this time. Broiling works well since the stove top is a bit cluttered).
- Drain noodles and reduce shrimp to low heat. Replace sauce pot to burner and add pasta sauce.
- Season pasta sauce with chopped onion and 1/4 cup hot sauce. Add shrimp and hot sauce. Mix well. (Optional: add a splash of milk for a nice color, or bacon you've made and chopped).
- Add noodles to sauce, mix thoroughly. (Optional: garnish with cheese. Mozzarella is great.)
