Melt in your mouth Salmon?

So I ate a restaurant today outside Washington DC called Nostos. I had the salon filet cooked medium. When it came out, it was melt in your mouth good. That's the inspiration for the question. How do they cook it to get it melt in your mouth? What exactly are they doing. It looks like an oven approach but at what temp and for how long? I should have taken a picture.

I ask this because I cook alot of salmon myself. I tend to go at 400F for 10 minutes and then broil it to create a crust. It's not bad but it isn't melt in your mouth....the texture literally melts upon eating it. Thats what I'm after here. Any tips, tricks, recipes, youtube videos, you recommend? Thanks!
