How to balance work and family over the holidays

I'm a caterer, and I make about 60% of our yearly income, sometimes more, on the days leading up to Christmas through to New Years. (Crunch time, literally and figuratively, starts December 15th and continues through January 5th.)

We live nearby a very upscale area and there are 10-20 dinners we're coordinating on Christmas Eve for families who didn't feel like cooking. Then we do 5-10 lunches on Christmas Day.

This has left my husband and daughters understandably upset. I used to say I'd find a way to shift responsibility to someone else around the holidays but I stopped saying that these last few years.

If I don't work on the holidays we don't have tuition for their schooling, we have a seriously difficult time making mortgage payments, and there's no way we'd have two cars (which, due to scheduling conflicts, we desperately need.)

I'm at a loss. Any words of wisdom from other parents who have to work holidays?
