Would adding granny smith apple to my Hoppin John be too much? I'm using bacon as my pork element

So far my plan for the black eyed peas is bacon, onion, celery, garlic, and various spices. I have an apple that is gonna spoil soon though and I thought it might compliment the saltiness and the onion. I'm also cooking collards and rice with bacon, so I'm considering a compote too. My only concern is that it'd be doing too much and it would over complicate the dish.
