I decided that for /u/thecrazychef 's night off, I'd get a little deep fried and batter-ey. We used canola oil in my largest pot for the deep fryer, and it seemed like medium heat on the stove kept the oil at a constant 300-325. The fish was super simple:
3/4 cup of flour, 1/2 tsp each cayenne and black pepper, and a can of beer. Whisk together until thoroughly mixed. Toss the fish in dry flour to coat, then dredge in the batter, and straight to the deep fry for about 2-3 minutes, or until it's a nice golden brown on the outside, and nice and crispy.
The ketchup recipe I used is here, but I left out the allspice and cinnamon. Makes a darn tasty sauce, but isn't quite like Heinz. For the tartar sauce, look here.
The fries were a bit of a pain in the ass, and though they didn't come out crispy, they were good :) I soaked them for an hour in cold water after cutting them, and then par-fried them for about 3 minutes at 300. The guide I found said to let them cool and re-fry them at 375, but the temp control on my range got a little tricky, and I think I broke my thermometer, so I had to wing it and guess at the temp.
All in all, it was a fun evening, with an awesome pub classic! Gotta work on my fry game though :P
