Jacques Pepin's pan bread is good and *very* forgiving

Being bored and hungry at work, I decided to give a pan bread recipe I saw Pepin do a while back. Go ahead and skip to the end of the post if you just want the recipe.

It's very simple, very quick, and quite tasty. I'm also pretty surprised at how flexible the recipe is. I had to use half regular flour, half gluten-free pancake mix (yay scrounging at work), sunflower seed oil, and I mixed in some spices I had on hand on top of accidentally adding a bit too much water to the pan.

I fully expected to get a dinosaur turd but I wanted to try it anyways, the flour I had wasn't enough to really do anything else with.

It came out great. The only thing I borked a bit was not letting the other side cook long enough so it was very soft and moist.
