Very inexpensive meal Tuna Fried Rice

I was a bit surprised about how inexpensive this turned out to be. It is a slow time of year for me and I have been going to Aldi to save money. There were just a few ingredients:

1 dozen eggs $0.89 1 bag of rice $1.29 1 bag of mixed frozen vegetables $0.99 1 can of tuna $0.65

extras already in the cupboard, soy sauce, ginger, hot sauce, oil

I basically made tuna fried rice. 1 can of tuna was a serving but the other ingredients will make about 4 meals so about $1.50 a meal for a big meal. Not the most nutritionally dense meal possible by any means but way more affordable than cooking up something from the organic specialty grocer.

Looking forward to gardening season!
