Hey everyone! I went out and purchased a slow cooker yesterday (3.5L capacity – UK based) as I'm trying to start eating a bit healthier whilst hopefully saving time and money in the process. Basically I'm just looking for a bit of advice on a basic chicken meal since I'm a fairly bland eater and primarily concerned with cost & protein...
I've read up on a couple of recipes here and there, but the information seems to be a bit conflicting. Some are saying that 8 hours (low) for chicken makes it juicy, whereas others state anything over 4 hours (low) leaves chicken extremely dry. Same issue with liquids, a few people have said no extra liquid is required as the chicken will likely lose enough during cooking, whilst others are adding several tablespoons or a cup of water etc.
If someone could give me an idea on the cooking time and amount of liquid needed for the following, it would be hugely appreciated!
- 450g (~1lb) 2 x skinless chicken breast fillets (very lean)
- 500g (~1lb) baby / new potatoes
- 250g (~½lb) broccoli or green beans or carrots (undecided)
Chicken will be thawed as I know frozen meat in a slow cooker is risky, but is there any difference between cooking frozen or fresh veg?
