Tips for eating healthy with depression?

I'm in the midst of trying to make a change in my life. I struggle with having the energy and the will to do things, and most days I find myself too apathetic to bother. This has made things like doing groceries and cooking for myself really difficult.

As a result, I've been running up my credit card debt for years eating nothing but fast food and things I can microwave. My finances are in shambles and this is a significant part of why. Lately I can't afford fast food at all, and my energy levels are too low to do groceries consistently. As a result, I've eaten nothing but rice and canned beans or veggies for the past two weeks because I'm so completely broke, and sometimes I can't even work up the energy to make the rice so I just don't eat.

I just don't know what to do to improve my nutrition at this point. Food was one of the few things that still gave me pleasure in life, and now it's just a bland vessel for enough calories to keep me alive a little longer. I used to love cooking, too, but now I'm struggling to make rice. It feels pathetic. If anyone has advice for low effort meals on a budget, it would mean a lot to me.
