Cooking for my husband- recipes to keep your weight up/gain?

Hello, any help would be very appreciated.

My husband is 30/M 5'11" currently at 179lbs.

He was at 195 with a 10% bodyfat I believe, and is getting increasingly depressed about losing the weight/muscle.

My husband is incredibly active, usually starting his day at 7 am, working until 4 as a massage therapist, going to TRX, Yoga, or doing weightlifting from 4 to 6, then working at costco from 6pm to 11:30 pm.

I do all the meal prep because he is so busy, and typically send him with about 3000 calories a day, however he continues to lose weight and is, in my opinion, losing more energy as well.

He wears a fitbit tracker that says he is most likely burning around 4000 calories a day, and honestly, i am having trouble figuring out how to feed him the macros and quantity he needs while also staying on budget and not packing him 8 meals a day. (He cant eat more than 3-4 times because he has very little time to do so.)

Are there any bulking recipes that are cheap, healthy, and not giant in quantity?

I try sneaking in calories and fats using olive oil and bacon fat, etc. But obviously it isnt enough.

It also doesnt help that I personally am working on losing/maintaining weight while helping my husband gain his weight back.

Again, thank you for your time!

Edit- the best I have been able to do is try to fill protien and calorie gaps with protien shakes, but I feel bad when that is a huge bulk of his "food" intake.
