Fastest Recipe I Know: Salmon & Potato

I just shared this in the "What is a nourishing dinner recipe that is quick to make?" thread, and I thought it could use its own post. This is one of my favorites. It is lightning fast and comes in at less than $2 per serving, especially if you buy the 15 oz can of salmon.

Salmon & Potato

Less than 15 minutes, hearty and delicious. Uses at most 2 dishes. Serves 1.

Ingredients:

1) One medium or large size potato

2) One 7.5 oz can of pink salmon (or half of a large 15 oz can - boneless and skinless if you prefer it that way)

3) 2-3 tbsp extra virgin olive oil (to taste)

4) 1-2 tbsp lemon juice (to taste)

Steps

1) Pierce potato all over with a fork. Microwave for 10 minutes on 60% power

2) While potato is cooking, empty salmon into the large dish or bowl you plan to eat from.

3) With a fork and spoon, quickly scoop the potato out of the skin and into the dish with the salmon.

4) Using the fork, mash the potato and mix with the salmon. The resulting mixture will be serving temperature.

5) Mix in the olive oil and lemon juice. Add salt and pepper to taste. BAM you're done.

It's not much to look at, but it's cheap, healthy, fast, and delicious.

Some variations:

~If you like potato skins, simply add the whole potato to the salmon.

~Try it with lime juice instead of lemon

~If your microwave doesn't evenly cook potatoes, try wrapping them in a wet paper towel during microwaving. Otherwise you can bake them in a toaster oven or regular oven wrapped in aluminum foil.

~I actually leave in the bones, as I like the slight crunch and extra calcium. They are perfectly safe to eat since they get soft from sitting in the can for so long.
