Have you ever made soup with shredded beef?

I have a bunch of delicious spiced shredded beef that I made for enchiladas leftover, and I wanted to try something different with it. So I'm thinking... a tortilla soup? I've never really made soup with beef before. Have you? What kinds of ingredients did you use?

I'm thinking of just taking a normal chicken tortilla soup recipe and substituting beef. I do not plan on using beef broth (because it's nasty) or vegetable broth (because it's bland). When I cooked the meat, I had it in a crock pot for about 8 hours with some chicken broth, so I'm assuming using chicken broth as the soup base would be fine. What concerns me most is the texture--most soups have chunks of meat, whereas shredded beef might... I dunno, dissolve or something?

Eh, basically I'm just looking for some advice. If you've made a delicious soup using shredded beef, please, tell me about it.
