Hello, I have a RecTec Mini pellet grill, and I'm using it to smoke/cook a 9lb prime packer brisket. I put it on at 5AM, at 250 degrees, expecting a 10-12 hour cook time to eat tonight. It was at 155 degrees at 930AM, so I crutched (foil wrapped) it. Now here at 11:15, it is showing 195 degrees in the middle of the point, and around 201 in the flat. Is this possible? It seems way too early, but I may be wrong. I just want to ensure its tender, and that it will be ok sitting in the towels/cooler for 8 -9 hours. Thanks in advance!
