Sous Vide Cookery: What do you make other than meat?

So I'm on the cusp of buying a Joule. My last hurdle as a hold out is I am not sure what to do with it other than cooks meats. The Chef Steps website has a few vegetarian recipes, but they're pretty limited to sides.

Any ideas or resources y'all use for sous vide things that aren't meat.

Note: I do eat and love cooking meat, but I do a lot meatless cooking regularly as well. Just looking for ideas to satisfy my cheap spending habits.
