I want to make less spicy buffalo wings in my new cast iron dutch oven. Need good recipe and advice.

I've seen people make buffalo wings in a fryer. The process seems to be heat the oil, drop in the raw wings, cook, remove, drain, then toss in buffalo sauce.

I'd like to try this on my gas stovetop in my new dutch oven. I plan to heat the oil, use a thermometer to keep it at the right temp. Any tips on how to not screw this up?

I also need a good recipe for wing sauce that isn't very hot so my family will eat it. Thanks!
