hi everyone. new to this sub. i've been vegetarian (more like pescatarian if i'm being honest) for almost a year. i feel like i don't have much variety in what i eat, mostly pasta, beans and rice, also a lot of prepackaged stuff. i'm trying to eat healthier with a lot more fruits and veggies than usual and am just looking for some good meal ideas (snacks too) that are relatively cheap since i do have a strict budget and are simple to make. i get home late a lot of nights and don't feel like spending over an hour cooking. any tips are greatly appreciated!
