I really want to get better at meal planning so I wanted to see what other people are making. This week is an odd week for me as I'll be on a work trip starting Tuesday but I wanted to make stuff so my husband could have leftovers.
1) For lunch today (and with plenty of leftovers), I'm making a veggie soup (onion, carrots, celery, tomatoes, green beans, potatoes, pasta, red lentils, cannelini beans, kidney beans, etc)
2) For dinner today, I'm making Upside down lentil shepherd's pie and caulipots (from Appetite for Reduction).
Depending on how the leftovers look, I may make a pot of beans tomorrow too.
