Why does only raw chicken poison you?

In real life, eating raw meat—be it porkchop, steak, chicken, or mutton—will definitely make you sick.

In Minecraft, however, only raw chicken makes you sick, which isn’t very realistic. This means that you can just eat raw meat all the time without cooking it, too.

I’ve always wondered why this is. Why doesn’t all raw meat give you food poisoning?
