Macaron Troubleshooting

I have been making macarons for quite a while now and they always seem to turn out perfect- however I have hit a bump in the road. It's been about a month since I've made them and for some reason with every batch I make they don't cook on the inside! I have tried lowering the temperature and cooking them for longer, raising the oven temp, etc. However they still refuse to bake all the way through. Does anybody have any ideas as to why this may be? I have cooked them at 300° for about 13min, 275° for 15. When I baked them at 275 they actually ended up browning and the feet rose way too high.
