So here are my groceries http://ift.tt/2kSfitu all of which will be used on Sunday. I'm kind of doing all my planning and game time is 5:30 (central time) and I have 2- 8 lb flats and ~70 wings. I'm cooking in a cheapo masterbuilt upright water smoker. My thoughts are:
- flats go on at 6 pm.
- wrap them in RBP at roughly midnight - 2 am.
- pull them at noon-ish
- rest until 4 on Sunday and slice
I would like to have them done by noon so I can get around 2 hours of smoke on my wings before they go in the oven. I don't realistically think it will take this long to cook, but I've never loaded up my smoker this much before.
