I have a big leg of lamb I was going to slow cook. I don't want to do traditional rosemary or thyme etc. Last time I did lime carnitas with feta and sun-dried tomatoes. Any ideas?

Slow cooked lamb is amazing. I'm bored of the traditional recipes. Googling "slow cooker lamb" gives you like 30 variations of the same recipe.
