Split pea soup question about the ham bone

I've always made my split pea soup in the past with bacon but I wanted to try it more like I remember my mom making it, with a ham bone, so I bought a shank today.

My question is, do I take the meat off the bone before or after cooking in the Instant Pot/pressure cooker?

It seems like the easiest thing to do is cut the meat off first and then cook the meat and the bone together and then remove the bone before serving. I feel like trying to remove the meat after is going to be really messy and hard because the bone will be hot and covered in split pea.

What's the best way to deal with the ham bone when making split pea soup?
