Gluten free meatloaf tips

Hello everyone! My wife was recently diagnosed with celiac and I generally do the cooking, so I'm trying to figure things out in the kitchen. We've gotten some GF flour and some corn pasta, but something that I'm having trouble with is replacing breadcrumbs and cracker meal, particularly in meatloaf.

I did a little poking around and one suggestion that seems interesting is instant potato flakes. We love potato and always have some on hand because it works really well for quick meals, so this seems like a winner. Has anyone tried this?

I love my mom's meatloaf recipe and I'd really like to adapt it. It calls for 1/4 cup breadcrumbs and a half sleeve of crushed saltines, which equates to about a cup total. So should I substitute a cup of potato flakes? This seems like a lot to me. I'd love to get any suggestions I can before I try this. Thanks!
