I plan on making pulled pork for my family's Christmas gathering on Monday. I have everything prepped in the crock sitting in the fridge, and plan to start cooking around 1 or 2 am Monday morning (letting it sit in the seasoning). Will I be able to take it right from the fridge and start cooking or should I let it sit out for a little while?
