Need meatball help. Fast

So I'm making this recipe but at three times amounts for a party this afternoon. I'm just realizing that I'm going to have to mix this in batches and it's going to take me longer than I expected. If I got everything premixed then left it in the fridge for an hour or two before forming the meatballs and cooking would that do anything to hurt the consistency of the meatballs. I could also preform the meatballs and just leave them in the fridge like that until they're ready to be cooked. Thanks!
