PSA: You can use consumables while processing, cooking, and doing alchemy if you hotkey the item.

After playing for ~8 months I finally realized that, although you can't use consumables (elixers/food) while you are processing/cooking/etc., if you assign them to a hotkey they can be used so it doesn't disrupt your life-skilling.
