Searzall for Christmas

My wonderful family got me a Searzall for a gift. I am so excited to use it, I melted cheese on a cracker with it yesterday for testing purposes. As far as meat goes, do I just go to town or lay down some butter or something first? Any pro tips?

On a side note, if you get one and use the tall skinny propane tank like the instructions say not to, it will tip over, you will burn your house down, and you will kill everyone.
