What have you found to be the max capacity for the KitchenAid stand mixer? The model I have is the 7qt Pro Series; It says it can handle up to 16 Cups of flour for dough mixing.
I was just making a double batch of bread with around 11 cups of flour & 4 cups of water; and the mixer was not happy at all. It didn't stall or stop working, just the metal casing around the planetary housing got pretty warm.
