This is one of my go-to recipes on cold days. Roughly 120 cals per serving and the recipe serves 6!
Ingredients: 2 cups lentils (rinsed) 1 large onion, chopped 4 cups chicken broth 3 cups water Cumin (to taste; I eyeball it and I like a lot of cumin) Salt and pepper to taste Juice of one lemon (Or to taste)
Rinse lentils well and look through to make sure there are no little pebbles. Roughly chop the onion, it's gonna soften while cooking and get obliviated by the immersion blender in the end so it doesn't matter how big or small you chop it. I also add a little chopped carrot if I've got them on hand for added color. Just throw the lentils and onions (and carrots if you're using any) to a pot along with all the broth and water. Bring it to a boil and add the cumin, salt and pepper. Let it simmer for about an hour, making sure to add more liquid if it starts looking dry. At the end, add lemon juice. Blend with an immersion blender until everything looks well blended. This soup thickens a lot as it sits, so no need to add any thickeners.
That's it! It's not a very pretty soup, but it's absolutely delicious, comforting on a snowy day and VERY filling.
By the way, this can easily be made vegan by using all water instead of all chicken broth! I haven't tried it with vegetable broth though I'm sure that would be fine. You can also cut about 200 cals from the whole recipe this way, but I think the added flavor is worth it. Enjoy!!
