To me it seems just about everything I cook, if someone else follows the exact same recipe, it just tastes better. (Referring to both individual people and restaurants)
Pollo Tropical for example. They make all kinds of chicken on the grill. Specifically something like the bone on breast. It seems like they just season it and throw it on the grill. If I just season some chicken. And throw it on the grill, well, just not the same.
It's often either overcooked or under cooked. I got a meat thermometer to help with that but still something is off.
Anyone have any general advice for cooking stuff like that and having it come out good? When seasoning bone in skin on chicken so you want it under the skin or on top? Is it simple enough to throw something like half a chicken or whatever (still all connected with bones and skin) right on the grill, like I see other places do? Or is there some step or something I'm missing
